Pumpkin Greek Yogurt Chips
I saw these mini Greek yogurt frozen chips when I was on Pinterest and have been wanting to make them for the longest time. So last night I did!
Suuuuuuper easy to make.
Frozen Greek Yogurt Chips
Your choice of Chobani Greek yogurt flavor {I chose pumpkin}
1 Ziplock bag
Directions: Add the Greek yogurt into a Ziplock bag and then use scissors to cut a small hole at one corner of the ziplock bag.
Use a small plate or pyrex dish and make dots.
Freeze for 1 hour

Pumpkin French Toast
I <3 French Toast and decided that Pumpkin French Toast was IT!
For those who are wondering about the calories in this dish....I'm not sure since I don't personally count my calories. Don't get me wrong, I think it's FAB for those of you that do, but it's just not for me. I did it in the past, and I got ob-sessed. No bueno. So instead, I really focus on what type of foods I put in my body. I believe that if you are eating CLEAN.WHOLE.FOODS, & you're exercising on the reg, you're good. This dish is obviously something you don't want to eat every day, but once in a while wont do any harm!
K anyhoo, so for the past few months, I've been staying away from Gluten & Dairy. It just makes me all bloated and puffy and yucky and it's just not fun. Ya feel?
However, since I am human, I will still eat some here and there, and of course pay for the damage later. With that said, I've been diggin' Udi's Gluten Free Bread. You can buy Udi's at most supermarkets.
Alrighty, how about we start cooking, yes?
Below is a list of ingredients you will need:
4 egg whites
1/4 cup pumpkin puree
1 teaspoon ground cinnamon {I used Trader Joes}
1 teaspoon pumpkin spice
8 slice of your bread of choice {I used Udi's}
A dash of milk of choice {I used almond milk}
maple syrup or any syrup of your choice
**btw, this recipe makes 4 servings**
- Beat the eggs, pumpkin puree, cinnamon, and pumpkin spice together in a bowl. It's going to be clumpy so you gotta use some muscle, dude.
2. Dip the bread slices into the pumpkin mixture until coated on both sides. Aaahhh, just look at this beautiful goopy deliciousness.
3. Spray non stick cooking spray onto a large skillet over medium-high heat. Place 4 of the bread slices into the skillet and cook until browned on both sides, about 3 minutes per side.
Once you cook em', and then you plate em', and then you drizzle maple syrup on em', and then sprinkle chopped pecans on em', it will look like this....
Aint it beautiful? Makes me want to cry is what it does.

Skinny Pumpkin Latte
I am so excited to share with you today my recipe for a Skinny Pumpkin Latte. {!!!!}
You guys, I am not even joking, this freaking taste like a 500 calorie Pumpkin Latte you get a Starbucks and it's ONLY 80 calories. 80 CALORIES!
I have seriously tried A LOT of Almond Milk Brands and my most favorite is the one from Trader Joes. You don't have to use Almond Milk though. I've been drinking it instead of regular moo moo because I was noticing my stomach hurting after drinking dairy.
Ok, are you ready for my secret recipe?!
1. Pour 1 cup of Almond Milk in a cup
2. Microwave it so it comes out HOT
3. Add 1 TBSP of Pumpkin Butter {Any Brand will do--I just happen to buy mine from Trader Joe's}
4. Add a dash of Pumpkin Spice & Cinnamon
5. Stir
5. Sip & Enjoy while laying by a crackling fire or watching trashy T.V

Quinoa Breakfast Cereal
Pronounced “keen-wah,” this protein-packed grain contains every amino acid, and is particularly rich in lysine, which promotes healthy tissue growth throughout the body. Quinoa is also a good source of iron, magnesium, vitamin E, potassium, and fiber. It looks a bit like couscous and is as versatile as rice, but quinoa has a richer, nuttier flavor than either of them.
Since I'm staying away from Gluten & Dairy, Quinoa has been a fab breakfast replacement. Don't get me wrong, I love my Oatmeal but my tummy gets all funky after I eat it and it's due to the Gluten that it contains.
This recipe is truly delicious and I encourage you to give it a try!
1 cup milk/almond milk
1 cup water
1 cup organic quinoa, (you can use any kind you want)
1 cup blackberries or blueberries
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans, toasted
1 cup water

Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blackberries and cinnamon; transfer to a bowl and top with pecans. Drizzle 1 teaspoon agave/coconut sugar or any sweetener you desire. <3

Thanksgiving Meal Survival Guide
I was going to save this post for a few days before Thanksgiving but I just needed to get it OUT. I've been talking to so many people about how 'nervous' they are about freaking Turkey Day. Nervous about over eating or how they are going to just handle.
I am here to tell all of you to just CHILL the frick out.
Thanksgiving Day is about spending the day with the people that you <3 most. It's not about over obsessing about food. I understand that we will be surrounded by mountains of stuffing & mashed potatoes and gazillion pies but there is more to it than that!
Wanna know my eating tips for Thanksgiving? Just EAT, dude. Yes. Seriously. I mean, don't be a freaking garbage disposal and shove a whole pecan pie in yer face but let a little loose, will ya?
1 meal wont make you fat just as 1 meal wont make you skinny. It's what you eat on a DAILY basis that really counts. So you might as well just ENJOY your day. Yes you will probably wake up looking like a dog-dang bloated puffer fish but that is expected. And don't EVEN be one of those people that weighs themselves after the Big Day. NO!
However, I have put together some tips for you on T-Day that I myself will be using.
#1. Dive in....Slooowwwllllyyy: I like to take my time and start with a smaller plate of food. I will put all the fixins on my plate but just in smaller portions. If I am still hungry, then I get my butt up and get some mo! They KEY is to start SLOW.
#2. Mind your Merlot: A typical 5-ounce glass of red wine contains 125 calories. But because wine glasses are larger, what appears to be a normal serving may actually be twice as much. The KEY is to start with a smaller glass as it will make you sip slower.
#3. Snack Smart: An hour or two before the event, eat a small snack containing fiber, fat & protein so you wont be a ravenous Beast during your meal. This may include hummus + carrots. Apples + Almond Butter. Don't get me wrong, I am having a few bites of that spinach artichoke dip & baked brie...but eating a healthy snack beforehand will help you not over eat.
#4. Savor your food: When we shovel our food down without tasting it, our brain interprets this as, “I haven’t been fed.” It will continue to seek out food so that it feels full and nourished – leading you to overeat. Chew.Slowly
#5. Honor the power of leftovers: Part of the appeal of Holidays is that we eat special foods that we reserve for this time of year. This can lead to feelings of scarcity, where we hoard the turkey, sweet potatoes, and apple pie because they only come around once every 12 months. Having your favorites more than once quiets feelings of, “I have to have it all right now.”

I LOVE FALL

Fall has always been my favorite season. The beautiful crimson and orange leaves and clear days are just so beautiful. I also love getting reacquainted with my chunky sweaters, laying next to a crackling fire with a glass of wine & book, and whipping up my traditional Holiday Foods.
Here is a list of things I'm planning on doing this Holiday Season.
1. Host a Gingerbread House making party
2. Make Pumpkin Soup

My Favorite Trader Joe Items
I go to Trader Joe's a lot. It's probably one of my most favorite stores to go to
besides Home Goods.
Sometimes I just go to TJ's to eat their free food
& coffee samples. I also made really good friends with Diego and he hooks me
up with extra samples.

Right now, they're sampling pumpkin coffee and it's freaking ah-mazing. I add
a dash of vanilla creamer and I am just the happiest person EVA.
Today I am going to share some of my most favorite Trader Joe items that

I'm going to start with my most favorite Almond Milk EVER. I've tried a lot of
Almond Milks, people. This is THE ONE. I love making my skinny hot chocolate &
pumpkin lattes with it.

If you don't like Seaweed then I cannot be your friend.

Fine, I'm kidding.
On second thought, I'm not kidding.
Okay fiiine I will still be your friend.
It's just that if you don't like Seaweed that means you don't
like my most favorite food in the whole entire world which is Sushi.
For my Seaweed lovers out there, this stuff is the shiznit.
For my non Seaweed lovers...I still <3 you.
This hummus is Danger. Seriously this hummus is so freaking good and I can
eat the whole container in under 5 minutes. It's true.
If you like hummus, get off your buns and go buy this at Trader Joe's, Yo!
These Rice Chips have literally changed my life. With only 120 calories in 38
Crisps, what's not to love? I recently made Skinny Nachos with these and it was
freaking da-lish. I also love dipping them in salsa and spicy hummus of course.

adding almond butter to my meal replacement shakes, spreading some on apple
slices or just eating it by the spoonful, dude.

I really love Dr. Praeger's items. He just makes really really good stuff, man.
These veggie burgers taste exactly like the inside of an egg roll.
And that's a good thing.

the next day, this will heal you.

Fun In the Sun In Sunny San Diego
My Fiance and I recently came back from a wedding in San Diego.
Can I just give a shout out to San Diego for a sec, plz?

So the hotel that we stayed at in La Jolla was GORG.
It was right on the water and had the most beautiful views. Plus is was walking distance to ALL the cute shops.
I really didn't have time to get a mani/pedi before I left

So I was on the hunt for a nail salon that could fix up my nasty
tosies. I asked the front desk of the hotel if they could point me in the right
direction and luckily there was one right next door to the hotel!
You guys, this place was AH-MAZING. I mean, ocean views ALL around. My plan
was to get just a regular pedicure but then she mentioned: The salt scrubs. The
foot masks. The hot oil treatment. And the callus remover. She HAD ME at
CALLUS REMOVER. 2 hours and 3 glasses of wine later, my toes looked like a
MILLION BUCKS.
Taaaa-Daaaa!
So what did I do after feeling like a brand spanking new woman with my Fab Pink pedi?? Go shopping of course, duh.
So I'm kind of obsessed with Francesca's. I have one near my house in SF and I go shopping there seriously all the time. Super cute clothes at a good price and jewelry is AMAZING.
This is the skirt that I bought that day. It is SUUUUUUUUPER CUTE. This picture doesn't give it justice but I paired it up with my gold wedges & black tank and it was the cutest outfit like, EVER.
K moving right along...
While the boys were off surfing, the girls and I went to this ADORABLE breakfast nook called The Cottage. It had the cutest out door patio and the food was off the hook.
Fresh Squeezed Tangerine Mimosas. Need I say more?
STUFFED French Toast. One was stuffed w/ Mascarpone Cheese & the other had NUTELLA.
Uuuummm, yeaaahhhh......
Don't worry, I didn't only eat stuffed French toast & bottomless mimosas. I had the most delicious egg white omelette with mushrooms, spinach, goat cheese, chicken apple sausage & rosemary potatoes. I didn't take a picture because I was too busy eating. *OINK*
The Wedding was absolutely beautiful. The Bride did a fabulous job with all of
her DIY magic. Plus the venue was SPECTACULAR!! It was right on the beach
and it was pure MAGIC.
I mean, just LOOK AT IT!!
Mmmkay, can we plz just pause here for a moment. There was a Caroline's Café
on the upper floor of the wedding venue. K, how cool is that?! Pretty cool I tell you. :-)
