Pumpkin Oatmeal

I'm kind of a Pumpkin fanatic. I love anything pumpkin. Pumpkin candles, pumpkin pie, pumpkin ice cream, pumpkin bread, pumpkin shower gel...I mean, the list can go on forever. K back to the pumpkin shower gel. Yes. I bought pumpkin shower gel one time. What was I supposed to do?! It smelled like pumpkin pie!

I've been wanting to make Pumpkin Oatmeal for the longest time and this morning was the most prefect Fall morning to do so!

 This is what you will need:

1/2 cup oatmeal {I used a Gluten Free Oats}

1 cup water

1 tsp cinnamon

1 tsp pumpkin pie spice

2 TBPS chopped peacons

1/2 cup canned pumpkin

1/4 cup milk {I used almond milk}

As for sweetener, you can use whatever your little <3 desires. I used 1 TBSP Pumkpin Butter.

Pumpkin Butter... aahh, it is my favorite!

You can have it on toast.

You can have it on pancakes.

You can have it in oatmeal.

It's just really really yummy, okay?!

Hi you guys! Okay, I wasn't going to add the 'before' picture because I was really really embarrassed, okay?! 

However, I over came my fear and I did it. Woo-hoo! 
So it's been 2 weeks working out with my Insanity program. I am noticing changes in my arms and tummy area. My legs always take a bit longer to show any difference. Why? I dunno they just do!

**NOTE: I had to block my eyes in the 2nd picture because I accidentally slept with makeup on and woke up with raccoon eyes. #girlproblems #raccooneyes #scary

Wait, are #hashtags like sooo 5 years ago or are people still doing them?  #whatever #byebye

P.S My fiancé just looked at my blog and saw my 'before' picture &
 said I look like a zombie about to attack through the computer screen. Um, RUDE. But in all seriousness, I guess I do in fact look a little zombie-ish.  #zombielove

Insanity Day 11

My mirror is really dirty & needs to be cleaned. I know, okay?!






Cauliflower is, like, so hot right now. If you're not cooking with cauliflower, you seriously need to jump on the cauliflower bandwagon and start cooking with it, man!

Sorry. I will settle down.



Okay, I'm better now. 

First, pulse the cauliflower until the pieces are the size of rice.







I sliced up some bacon and threw it in a pan and cooked it until it was nice and crispy and delicious.

After I cooked the bacon, I whisked the eggs and dumped it in the same pan I cooked the bacon in. After it was done cooking, I put it on a plate and set it aside. I then added the onions & mushrooms into a pan and cooked until the onions and mushrooms were nice and soft. After it was done cooking, I added the cauliflower rice to the pan and mixed it together along with the eggs. I let it cook for about 7 min on medium heat. 

So while that was cooking, I went outside to my garden to pick the rest of my ingredients.


 Basil from your garden is the best kind of basil because it came from your garden. True story.



K, can we pah-lease take a moment and admire how freakishly large my green onions are? I mean, they're seriously out of control. Almost poked my eye out!



 So the basil & mint were from my garden but the fella to the right was from the market. It's ginger by the way if you didn't know. Did you know that ginger is sooo healthy for you? Its a wonderful anti-inflammatory and also works wonders if you have a tummy ache. Just grate some ginger and throw it in a pot of boiling hot water and then strain it and then add honey. Good stuff.



After the cauliflower rice mixture has cooked, add the bacon and toppings to the pan and mix everything together. Oh! And I forgot to mention something very important! Instead of using the sauces that were mentioned in the recipe, I used soy sauce instead. It's all I had!

So, what did I think of this recipe you ask? I think it was really tasty. I mean, it didn't taste like authentic restaurant style fried rice, (we are cooking with cauliflower, people!) but, it's definitely a healthy alternative and I enjoyed eating it! Enjoy!

Insanity Day 10


Hi you guys! Wow, it's been a whole 10 days already. Crazy I tell you!

Okay sorry for the short post but I'm super ty-ty and need to hit the hay. Or is it hit the sack? Ew. Do some words kinda creep you out when saying them out loud? I think I'm going to have to add the word sack to the list. It goes along with the words "moist", "festering" & "meal". K I'm done grossing myself out.

Oh you will notice I am in a new location today. My fiance was taking a shower and getting the mirror all foggy. How dare he take a shower during my bikini shoot! Rude. Oh yeah, and I'm not wearing a bikini today. Am I allowed to do laundry every once in a while? Sheesh!

Insanity Day 9.



Healthy(ier) Chocolate Chip Cookies


I love cookies. I love alllllll kinds of cookies. So day I made some chocolate chip cookies. The end. Wasn't that a beautiful story?

Okay fine, let me start over. In honor of Hump Day, I decided that it was very necessary to make chocolate chip cookies. I mean, it's Hump Day for crying out loud. 

I found this recipe online from one of my newest favorite websites, 'Chocolate Covered Katie'. Plus she claims that these cookies are only 23 calories per cookie ball. I'm not sure if that's entirely acurate. I am going to do the Math before I scarf down 20 cookies.

Ready to get started? Lets Go!

After you dump all of the ingredients into a bowl, mix it really good. 

Note** It's very important at this step to lick the bowl.



 After you form the dough into balls and bake as directed and then let the cookies cool off, you can either eat the cookies as is, OR, you can get really sassy like I did and make an ice cream sandwich :-)

Helllllo everybody! I hope you all are having a super great day :-)

So day is Day 8 with Insanity & I am feeling stronger than EVA! 

I am noticing that I am not as, how do I put this.. flabby? I guess flabby is the word? I dunno, I guess what I am trying to say is that I am feeling tighter. My thighs and stomach are feeling just not as 
flabb-ay. OMG, the word FLABBY is rly starting to annoy me. Forget I even said the word! 

Oh and guess WHAAAAT?! While I was surfing the internet this morning I came across a healthy chocolate chip cookie recipe. UUMM, Are you guys excited as I am??!! I just LOVE hot-gooey choc chip cookies. And don't let the word 'healthy' scare you. I checked the ingredients and it doesn't contain, like, gallons of fiber & psyllium husks. What I mean is, you wont have to be close to a bathroom after you eat these cookies. Ew. 
Anywayz, I am sooo making those babies tomorrow. Maybe I will get all sassy with it and make an ice cream sandwich?? :-)

Hi Peeps! So I finished a full week of Insanity! Whoop-Whoop! I'm not feeling as tired during my workouts which is good considering I had to press PAUSE every 20 seconds the first time around. I wish I was joking!

 UUUMMM, mkay, I opened up my jar of peanut butter and there was a friggin SMILY FACE on the lid. I mean, that basically made my YEAR.




Hi everyone! I hope you are all doing great! I have another recipe I wanted to share with you. 

First, I need to admit something to you. I have a taco obsession. There, I said it! Aaahh, I feel cleansed now. So I made these tacos for lunch today and they were the bomb-diggity & wanted to pass the recipe along.

**NOTE** I didn't make Bobby's salsa, I just followed the recipe for the mahi mahi. Also, I bought my mahi mahi from Costco. I LOOOOVE COSTCO! Okay, back to the recipe...

I had some salmon in the fridge so I grilled that bad boy too. All I did was sprinkle salt and pepper and GRILLED. Thats it!

I bought my mango salsa at Whole Foods but if you don't have a Whole Foods near you, it's okay don't panic! There are tons of recipes you can find online. 

ALSSSO, I have been using this brand of tortillas and I am so HAPPY with them. They only have 120 calories in 4 tortillas. Isn't that AWESOME?!

Spaghetti Squash 'Spaghetti' with Turkey Meatballs

Hi you guys! Okay so I made this dish the other day and it was SOoooOo GOOD I just had to make it again & wanted to share it with you. I got the recipe here: http://thebettyrocker.com/paleo-turkey-meatballs-gluten-free/

**I doubled to the recipe and added a lot of basil (more then it asked for) & added more garlic too**

Make sure you season it well with salt and pepper.

Are you guys ready to learn how to make it? Just follow these steps!

First things first, gather all of your ingredients.

Then chop all of the ingredients and place in a large bowl. Add your turkey meat at this time.
**This recipe calls for baking these meatballs in the oven. My oven is out of order so I cooked them on the stove top. I dont recommend this because it was a pain in the butt and took 4-ever**

Wow, just look at these delicious beautiful balls. Ew, not those kind of balls. You guys are srsly gross. Get your mind out of the gutter. 
K, moving right along. 
Now its time to prepare the Spaghetti Squash. Take the beautiful squash and WACK it in half. Please be careful while doing this. Once you slice that baby in half, remove the string & seeds. It's going to remind you a lot of carving a pumpkin. I love Halloween. K, anyway, this is what it should look like.
Next, get a microwave safe dish. Put about 1 inch of water in it and place the squash face up.You're going cook it in the microwave for 10 minutes. I know, 10 minutes is a long time. I dont think I've ever cooked anything in the microwave for that long. Anyhoo, before you put it in the microwave, put a paper towel on top.

After the squash is cooked, let it cool off for 5 minutes. Okay, once it's cool, take a fork and start scrapping it. It should start looking like Spaghetti noodles. Exciting, right??!!

Next, in a bowl, add however much of the squash you'd like. Then add the spaghetti sauce & meatballs. I chopped some basil & then sprinkled some parm cheese on it. Enjoy everybody!


Sooooo, I decided that I should maybe start taking my daily pic in my BIKINI because,I dunno, it's easier to see my changes that way. Really didn't want to strip down but here ya go!

Holy Guacamole!!!!! Todays workout was freaking TOUGH lol. I seriously did not feel like working out at all today but you know what??...I feel FREAKING AMAZING right now. Even when you don't feel like working out, JUST DO IT. Your body will thank you & you will be in such a better happier mood too! :-)
