Cauliflower is, like, so hot right now. If you're not cooking with cauliflower, you seriously need to jump on the cauliflower bandwagon and start cooking with it, man!

Sorry. I will settle down.



Okay, I'm better now. 

First, pulse the cauliflower until the pieces are the size of rice.







I sliced up some bacon and threw it in a pan and cooked it until it was nice and crispy and delicious.

After I cooked the bacon, I whisked the eggs and dumped it in the same pan I cooked the bacon in. After it was done cooking, I put it on a plate and set it aside. I then added the onions & mushrooms into a pan and cooked until the onions and mushrooms were nice and soft. After it was done cooking, I added the cauliflower rice to the pan and mixed it together along with the eggs. I let it cook for about 7 min on medium heat. 

So while that was cooking, I went outside to my garden to pick the rest of my ingredients.


 Basil from your garden is the best kind of basil because it came from your garden. True story.



K, can we pah-lease take a moment and admire how freakishly large my green onions are? I mean, they're seriously out of control. Almost poked my eye out!



 So the basil & mint were from my garden but the fella to the right was from the market. It's ginger by the way if you didn't know. Did you know that ginger is sooo healthy for you? Its a wonderful anti-inflammatory and also works wonders if you have a tummy ache. Just grate some ginger and throw it in a pot of boiling hot water and then strain it and then add honey. Good stuff.



After the cauliflower rice mixture has cooked, add the bacon and toppings to the pan and mix everything together. Oh! And I forgot to mention something very important! Instead of using the sauces that were mentioned in the recipe, I used soy sauce instead. It's all I had!

So, what did I think of this recipe you ask? I think it was really tasty. I mean, it didn't taste like authentic restaurant style fried rice, (we are cooking with cauliflower, people!) but, it's definitely a healthy alternative and I enjoyed eating it! Enjoy!
