Gone til Monday!


Hi sweet friends! I wanted to let you know that I will be gone til Monday! My fiancé & I are heading to San Diego for a wedding ~ Whoo-hoo!
 
Also, I am SUUUUUPER excited because I am getting certified on Sunday to be an Insanity Instructor! You all know how much I love my Insanity!!!

so I rushed to Walgreens aaaaaand picked up some press on nails!
 
Have not worn these since I was 10! LOL!

Ways To Get Past Your Fitness Plateau


 

So you're working your bod on the reg and you aren't seeing any results.
 
It's called a plateau, and it's not fun.
 
But don't worry! I have some ideas on how to revv it up.


#1. Frequency: It's really important to increase how often you work out

#2. Intensity: You should try and increase the level at which you train

#3. Time: You should also change the length of time you train for. Instead of doing only 30 minutes add 15 more minutes to your workout. 

#4. Sleep: When you sleep, your body repairs and recovers from your training. Try to aim for 8-9 hours. Your body need it!



 



Change Your Eating Habits

 
If you have been eating 3 meals a day try breaking these into 5 or 6 smaller meals throughout the day.

Eating smaller meals more often keeps your metabolism revved up to burn more calories.

 Try adding a bit more protein and less carbs to your meals.


 
And lastly, put down the Candy Bar, Cheetos, Cupcake, and Pringles.
 
 
And don't even get me started on Starbucks Frappuccino's!

Guac-Kale-Mole



 
It's no secret that ME & Kale are BFF <3. No one can get in between Me & my Kale.
 
No one I tell you!
 
I recently came across a recipe for Guac-Kale-Mole. Say whaaaa??
 
Yep, that's guacamole +  kale, my friends.
 
 Well are you as excited as I am?!?!
 
So I rushed to Whole Foods to get all the ingreds and was just over the top excited to whip it up.
 
I came home, threw everything into my Ninja Blender (My Ninja is BFF
Numero Dos)
 
(Yes I can speak a little bit of Spanish)
 
 **Ahem**
 
Hola mi llamo Caroline. Mi gusta flamencos, naranjas, y cachorros.
 
That means I like flamingos, oranges, and puppies.
 
See, I told you I can speak a little bit of Spanish.
 
K, back to the Guac-Kale-Mole!..
 
 
So after I blended everything up this is what it looked like...

Seriously tho, this stuff is the Bomb-Diggity. Enjoy with chips, sliced peppers, endive, and even on your tacos! Or breakfast tacos!

  • 1 large garlic clove
  • 1/2 of a medium shallot (yields approx. two tablespoons chopped)
  • 2 cups loosely packed kale
  • 3 tablespoons olive oil, divided
  • 3 tablespoons roughly chopped cilantro
  • 3 tablespoons roughly chopped parsley
  • 1 small jalapeno, chopped and seeded (I wanted a mild guacamole, but if you want more heat, keep the seeds and/or use a larger jalapeno)
  • 3 medium avocados
  • Half of a lime
  • Salt and pepper to taste
  • Directions:

    1. Chop the garlic and shallots. Chop the kale and remove the hard stems. Massage kale to help it break down. NOTE: The hard stems are hard to puree unless you have a super-powered food processor which is why it’s important to remove them.
    2. Add garlic, shallots and kale to the food processor along with one tablespoon olive oil. Process until smooth. Add cilantro, parsley, and jalapeno to the food processor and process until all the ingredients are combined.
    3. Put the kale mixture in a medium bowl. Roughly chop the avocados so they’re easier to mash. Add the avocados to the bowl. Add two tablespoons olive oil and mash the avocados and kale mixture until creamy and combined. Add lime juice from the lime half and salt and pepper to taste. Give the guacamole a final mix.
    4. VARIATION: When I first made this recipe, I threw all the ingredients into the food processor together and ended up with a thick dressing rather than a chunky guacamole. Because the kale takes longer to break down than the avocado, I had to process the avocado until it was beyond creamy and, in addition, I had to add more olive oil to help the ingredients process. There was absolutely nothing wrong with this kale-avocado dressing – it too was delicious. I was just craving a chunky guac. But, if you desire a yummy kale-avocado dressing, then follow the directions above. But, at the end, throw the kale-avocado mixture back into the food processor along with 1/4 cup olive oil and process until you reach your desired dressing consistency. You may have to add a few additional tablespoons of olive oil if you want a thinner dressing. Whatever the consistency, it’s great on tostadas, salads, chicken, you name it!

    Make this WEEKEND COUNT!

     


    I often hear people say this: "I don't care if I ate 5 cupcakes, 3 slices of pizza, and a packet of m&m's. I will just go to the gym tomorrow!"
     
    Just because you worked out, does not mean it's okay to eat like crap!
     
    It's really important to separate food and exercise.
     
    Eating like crap + working out = a WASTE of time
     
     
     
    "But it's the weeeeeekend!" Are you seriously going to F-UP all the hard work you did during the week by eating pizza, Halloween candy, & PUMPKIN PIEE?!
     
    I didn't think so!
     
    You are STRONGER than that!

    My Favorite Things

     
     
    Before I begin, I just need to get something out.



    Raindrops on roses and whiskers on kittens;
    Bright copper kettles and warm woolen mittens;
    Brown paper packages tied up with strings;
    These are a few of my faaaaaaavorite things!



    Okay, I feel better now.



    Today I wanted to share with you some of my most
    favorite things!

    I'm going to begin with one of my most favorite-healing-magical products that I've been using for the past 13 years. When people ask what I would being with me on a deserted Island, I say, 'Tea Tree Oil'. It's true.





    Tea tree oil is an essential oil obtained by steam distillation of the leaves of Melaleuca alternifolia, a plant native to Australia.

    There are so many wonderful benefits of Tea Tree Oil. Below I listed a few.

    It kills bacteria: Tea tree oil has powerful antibacterial, antifungal and antiviral properties. Works WONDERS on pimples, acne ect.

    It’s a natural alternative: Benzoyl peroxide is an ingredient found in most acne products because it helps reduce inflammation and get rid of dead skin cells, however,  it can also have some bad side effects such as peeling, burning and itching.
    Abrasions & Minor Cuts: After cleaning the area well, apply a few drops of the oil directly. If a bandage is needed, allow a few drops of the oil to penetrate a cotton ball, then lay it face down on the wound with a bandage on top.





     
    Don't be fooled. This my friends is a lip/cheek stain--not nail polish!
     
     It's the perfect flush, like you've just been at the gym or out in the snow. Natural and sexy and you don't have to use much so it lasts forever!


     
    Oh I just LOVE this tinted moisturizer. I've been using it for a little over a year now and it's light, sheer, delivers coverage & has SPF.
     
     
     
     
    The price is a little steep on this product but I personally think it's soooo worth it. Once you try it, you'll know what I'm talking about! The hair serum is just FAB. Plus it smells ah-mazing!
     
     
    Hydrangias. White. Hydrangias. They make me SO happy. Plus they last 4-Ever.  I buy them every 3 weeks and place them in my bathroom, kitchen & family room.
     
     
     
     
    I just had to add this in here. If you don't already know, I am obsessed with sushi. Like, I could eat it every day. Whenever my fiancĂ© and I go to our favorite sushi restaurant they know to bring out a gigantic mountain of ginger & a HUGE ball of wasabi. That's just how I roll, yo!

    Mahi Mahi Fish Tacos






    To ALL my TACO LOVERS out there.....Throw your hands in the aaiirr and wave em' like you just don't caarree!!!

    Tacos. *Sigh* I could seriously eat them every day. And I'm not talking about Taco Bell, people. Don't get me wrong, I love my Crunch Wrapped Supremes & Double Decker tacos. I once ate 12 soft tacos in under 3 minutes. But that's another story for another time.

    Today we are talking F-R-E-S-H.


    Freshly diced Pico de Gallo. Homemade Guacamole. CILANTRO! CORN TORTILLAS! YES! YES! YES! GIVE ME MORE!!!!!

    Got a little carried away there for a moment.

    k, I'm better now.

    **Clears throat**


    So today I will be giving you a recipe that is very close to my <3


    These tacos are seriously redic.

    They are redic because they are easy to make.

    They are redic because they taste so darn good.


    Here is how you make the Mahi Mahi:

    By the way, I buy my Mahi Mahi from Costco. Comes in a frozen bag.

    Thaw out 4-5 pieces of Mahi Mahi.

    Once thawed, sprinkle with salt, pepper, Ancho Chili Powder, and olive oil. THAT'S IT.


    Let that marinade for about 30 minutes. Place on the grill for 4 minutes on each side. Cover with tin foil and let it rest for about 5 minutes.

    I've been using these tacos by Mi Rrancho for a while now and I am very happy with them. Only 120 calories in 4 tortillas. Amazing, right?!





    For the Salsa:


    You can use anything your little heart desires. For me, I LOVE Jalapeno Mango Salsa. It goes so well with the Mahi Mahi. I buy mine from Whole Foods, BUT, you can easily make your own.
    Just Goooooogle 'Jalapeno Mango Salsa' and whip it up!


    As you can see, these Tacos are a piece of cake to make.

    Don't forget to top with cilantro, and guacamole!

    If you are looking for a thicker, creamer version of your regular yogurt, you must try Greek Yogurt!

     

    There are many benefits to eating Greek yogurt. Below I listed a few.



    Protein

     
    Greek yogurt can have twice as much protein as regular yogurt. The extra protein will help you feel full and leave you feeling satisfied.

     

    Low in Carbohydrates

     
    Regular yogurts have 15 to 17 grams of carbohydrates per cup, where Greek yogurt averages around 9 grams.
     

    Versatility

     
    Greek yogurt can be used for many dishes. Because its thick texture and rich taste, many people use it as a substitute for sour cream and even use it for baking.
     

    Probiotics
     
     
    If you're trying to boost probiotics in your diet, Greek yogurt is your answer! Probiotics improve your digestive health and keep the bacteria in your gut healthy. They also boost your immune system!  Make sure the Greek yogurt you choose has "live and active cultures" on the label.
     
     
     
    These Blueberry Yogurt Parfaits are so delicious and super easy to make.
     
     

    I used frozen blueberries. You can of course use fresh however frozen is what I had in my freezer!


    I added about 1/2 cup of the frozen blueberries to a pot and let it simmer for about 10 minutes until it had a syrupy consistency. You can add a little bit of sweetener at this time. I added about 1/2 TBSP of coconut sugar.

    Insanity Day 30!



    Wow! I can't believe how FAST these 30 days went by!

    I'm really proud of myself because this is the first time I've actually stuck with a program and not given up.

    I have my goals written down on a sticky note everywhere! They are on my cell phone wallpaper, on the fridge, on the dash board in my car....on the bathroom mirror!

    I am looking forward to the next 30 days and thank you all for your encouraging words and support!

    My Costco Favorites


    I get asked a lot about what I buy at the Grocery store.

    I do most of my big bulky item shopping at Costco because for

    1. I like to save $$

    And 2. I like to eat their free samples.


    This is what I look like when I leave Costco spending less than $100



    Here are a few of my favorite Costco picks:


    Oh how I LOVE my Almond Breeze! I add it to my Shakeology and it makes it creamier and just yummier! You could also use it on your favorite cereal or for any milk substitute.
    And at only 40 calories per cup, what's not to love?!

     

    It was just until recently that I had finally tried this 'Almond Butter' that people speak of. This stuff is good. You guys, this stuff is REAL GOOD. I like to add some to my Shakeology when I'm making my Chocolate Almond Joy Shake (Thats a recipe for another time and OMG is it GOOD!)

    You can also enjoy Almond Butter with apples or celery.



    Blueberries are my favorite kind of berry. It's true. I love adding them to oatmeal, my meal replacement shakes, or just by the handful!



     
    WOW. HOLY SMOKES. HOT TAMALE. HAY CARAMBA! Can someone please fan me down?!
    It's getting HOT up in herrre!
     
    This Greek Yogurt is AMAZING. It's beautiful. It's Creamy. It's pro-biotic-y.
     
    Es mi muy favorito.
     
    Buy it. Now.
     
     
     
     
    I eat shrimp probably 2 times per week. It's best GRILLED. Speaking of GRILLED, I almost burned my house down GRILLING for the first time by myself last night. But that's another story for another time.
     
    My favorite are Shrimp Tacos. All you need to do is toss the shrimp in some olive oil, add salt & pepper and GRILL. Of course you can add any spices you'd like.
    Top with jalapeno mango salsa & cilantro and BAM! You've just made yourself a delicious lunch. Or snack. Or linner. (Linner= Dinner + Lunch combined, duh) 
     
     
    You can't argue with Organic Cage-Free Eggs, people. I mean, ya just can't!

    Egg White Breakfast Muffins

    Yesterday, I whipped up these cute little muffins and wanted to share them with you guys!

    You can get reallllly creative and add anything you want to them!
    Broccoli. Peppers. Mushrooms. Olives. Bacon. Tomatoes. Did I mention you can add BACON?!

    This is all you need to do to make these breakfast muffins. Are you READY? Okay good.

    1. Get a bowl
    2. Fill the bowl with either egg whites OR regular cracked yolk-y eggs
    3. Whip em' Whip em' REAL GOOD
    4. Add your toppings
    5. Spray non-stick cooking spray into the muffin tins
    6. Pour egg mixture into the muffin tins
    7. Bake on 375 for about 25 min or until they look ready. You'll just know when their done, mkay?
    8. Take them out of oven
    9. Let those suckers cooooool off a bit
    10. Eat


    P.S I like to dip my little eggy muffins into a bit of Sriracha. 'Cause I like it HOT.

    So I woke up yesterday, looked in the mirror, and BAM! I noticed that my bootay was looking a little diffffferent.
     
     
     A little smaller. A little tighter. A little less pancake-y. A little more lif-ted.
     
     
    It's only been 25 days of doing this program and this is what I have learned so far:
     
     
    1. CONSISTENCY is the KEY to success. Not just in fitness, but in all areas of your life.
     
    2. FOCUS is POWER. Are you 100% focused or are you just merely interested?
     
    3. Your potential is determined (or limited) by your self belief. What are you telling yourself everyday? Stop focusing on the things that you don't want but rather more on the things you do want.
